- 2¼ cups all-purpose flour, sifted.
- 1 cup sugar.
- 1 teaspoon baking soda.
- 1 teaspoon salt.
- 4 medium ripe bananas, mashed (about 1½ cups)
- ½ cup unsalted butter, melted and cooled.
- 2 large eggs.
- 1 teaspoon vanilla extract.
All the bread needs is to be tightly wrapped in plastic film or between two paper towels in an airtight container (via Baking Kneads). The wrap will help keep moisture in the bread while the paper towels will help absorb any moisture that leaks out.
- 1 ripe banana (peeled weight 100g/4oz)
- 1 tbsp milk.
- 50g/2oz soft butter or baking spread.
- 75g/3oz plain flour.
- 75g/3oz caster sugar.
- ½ tsp bicarbonate of soda.
- ½ tsp baking powder.
- 1 free-range egg.
